Cinnamon nut pancakes

These pancakes don't taste exactly like pancakes... They are a different dish all on their own (that just so happens to be gluten free and packed with good for you ingredients like flax and ground almonds)!  They are a bit heavier than a traditional pancake but they also have an amazing sweet, nutty flavour.  These yummy cakes taste best when served piping hot with a drizzle of maple syrup or topped with fresh berries and a dollop of whipped cream.

Cinnamon Nut Pancakes

Makes 8 pancakes

1/2 cup almond meal
1/4 cup ground flax
2 eggs
2 tsp cinnamon 
2 tbsp sugar
3 tbsp milk
1 tsp baking powder
1 tsp vanilla

1. Mix all ingredients together in medium sized bowl.
2. Heat skillet over medium heat & melt a teaspoon of oil or butter in the pan.
3. Drop 4 individual spoonfuls of batter in the hot skillet and cook 2-3 minutes or until the bottom of the pancakes get crispy.  Flip the cakes over, and continue cooking another 2-3 minutes.
4. If they are not going straight onto your plate, cool them on a wire cooling rack to ensure they don't get soggy.
