These pancakes don’t taste exactly like pancakes… They are a different dish all on their own (that just so happens to be gluten free and packed with good for you ingredients like flax and ground almonds)! They are a bit heavier than a traditional pancake but they also have an amazing sweet, nutty flavour. These yummy cakes taste best when served piping hot with a drizzle of maple syrup or topped with fresh berries and a dollop of whipped cream.

3. Drop 4 individual spoonfuls of batter in the hot skillet and cook 2-3 minutes or until the bottom of the pancakes get crispy. Flip the cakes over, and continue cooking another 2-3 minutes.
